Healthy Tuna Salad

Ingredients

8 oz nonfat Greek yogurt
1/4 cup parsley, chopped
1/2 tsp white onion, minced
1 tsp fresh dill, chopped
2 cups green beans
1 bunch Boston lettuce
1 whole tomato, cubed
4 oz cheddar cheese, cubed
12 oz water-packed solid white tuna
1/4 cup cucumber slices
1 teaspoon parsley, for garnish

Preparation

In a bowl, combine yogurt, parsley, onion, and dill. Cover and chill.

Cook green beans in salted boiling water until done and drain. Chill quickly in ice water and drain well. .

Clean and dry lettuce. Cut into bite-sized pieces.

In a large bowl, combine lettuce and green beans. Spoon dressing over salad and toss. Add tomatoes and cheese. Flake tuna into the salad bowl. Gently toss salad. Garnish salad with cucumber slices and extra parsley.
