Combine tomatoes, garlic, onion, shallots, thyme, and bay leaf in a large pan. Bring to a boil, turn down heat, and simmer 2 hours.
Remove bay leaves and place mixture in a food processor, add maple syrup, and the rest of the ingredients. Process until smooth (be careful - the hot mixture bubbles up). Cool.
