Catfish Sticks

Ingredients

Vegetable-oil spray
1 lb thick Catfish fillet
1/2 cup nonfat or low-fat milk
1/4 tsp salt or to taste
1/2 cup dried bread crumbs
1/4 cup grated Parmesan
1/2 tsp dried oregano leaves
1/2 tsp dried basil
1/2 tsp paprika
1/4 tsp freshly ground pepper

Preparation

1. Heat the oven to 450°F.

2. Spray a baking tray with the vegetable oil.

3. Cut the fillets down their length into 1-inch-wide strips, then cut the strips into sections about 3 inches long.

4. Combine the milk and salt in a shallow bowl large enough to hold all the fish. Add the fish, turning the strips in the milk to coat them on all sides.

5. In a second shallow bowl, place all the breading ingredients, combining them well. Remove one piece of fish at a time from the milk, and roll it in the breading mixture. Place the fish on the greased baking tray. Repeat this process with the remaining pieces of fish, aligning them on the tray so that there is some space between each piece. Spray the breaded fish lightly with the vegetable oil.

6. Place the tray in the middle of the hot oven, and bake the fish sticks for 5 minutes or until they have turned golden brown on the bottom. Remove the tray from the oven, and, with a spatula, carefully turn the fish sticks over. Return the tray to the oven for another 3 minutes or until the fish sticks are brown on the other side. Note: If your oven heats from the top and bottom, it may not be necessary to turn the fish sticks to brown them on both sides.
